Oxacan Tamales.

My favorite food is Oxacan Tamales.

INGREDIENTS
1.-5pzas. Banana leaves.
2.-1/2pc. Chiken breast
3.-125gr. Lard.
4.-250gr. Tortilla dough
5.-c/s. Tequesquite.

PROCEDURE.
1.-Cook with onion, garlic, salt and herbs chiken.
2.-Beat butter until ligh and fluffy.
3.-And the tortilla dough to butter and whisk constantly.
4.-Tequesquite andds a little salt dissolved in water and mass.
5.-Chek that the dough is ready in a glass of water.
6.-Place on banana leaf surface and make some tamale, then put a little black mole and finally add the shredded chicken breast.
7.-Cole and Cook tamales in a steamer.

This food consumption much at the beginning of the year that is when but why it is Easter and all that, I really like all kids of tamales but that I like and I prefer eating Oxacan tamales.

Roasted suckling pig




My favorite food is Roasted suckling pig.

INGREDIENTS.
1.-3pcs. Banana leaves
2.-375gr. Pork Leg
3.-250gr. Pork
4.-1pquete. Achiote
5.-6Film. Orange s
6.-100ml. White vinegar
7.-5g.Cumin
8.-5g.Dried oregano
9.-2gr. Cinnamon
10.-3pcs. Allspice
11.- 3pcs. Garlic.
12.-125gr. Lard.
13.- Salt, white pepper and cayenne pepper to taste

FOR THE SACUCE.
3pcs. Radishes
1pza. Onion girl
2pzas. Habanero peppers.
1pzs. Coriander.
3pcs. Oranges
50ml. White vinegar
Salt to taste.

PROCEDURE
1.-Lune the cooker with the banana leaves previously heated to tender.
2.-Achiote Blend with orange juice, vinegar and all spices.
3.-Dip the meat with the juice and let marinate in overnight
4.-Place the meat on the leaves once it has passed the marinatig time.
5.-Melt the butter and cover with beef lard.
6.-Cover with banana leaves, meat, close the pressure aokker and cook for 50 minutes.

SALSA
7.-Finely chop all ingredients.
8.-Let stand in orange juice chop everything for 30 minutes.

Well like this meal my mother that fits well and makes whenever I like, and my mother who knows he does for me and my father love.
